HARVEST:
Exclusively manual in perforated crates with careful selection at the end
of August.
VINIFICATION:
The grapes from the vineyard, harvested in crates, are gently pressed
within a few hours using manual and careful programs. This results in a fresh juice
that clarifies within a few hours, separating from the solid parts. With skillful use of
biotechnology and cold, a slow alcoholic fermentation is carried out at a controlled
temperature of 13°C until all the grape sugars are consumed, yielding the product
that will serve as the base for bottle refermentation, where the carbonation occurs.
BOTTLE REFERMENTATION:
In a dedicated underground gallery to maintain a low
and constant temperature.
BOTTLE AGING:
Minimum of 9 months.

Approximately 2˙500 of 0,75 L
CHARACTERISTICS:
A brut sparkling wine with a significant and persistent
effervescence, very structured and distinctive, featuring intense and mildly
aromatic scents. In the mouth, it is pleasantly structured, full-bodied, savory, in
perfect harmony with a suitable level of acidity and smoothness. A long-aging
product that refines its characteristics over the years.
FOOD PAIRINGS:
It pairs excellently with substantial, flavorful, or spicy dishes,
especially seafood-based first courses, mussels, and fish soup. Outstanding for all
occasions and as an aperitif.
